Food and Wine Paring Tips
Red wine can accompany a wide variety of foods if you choose, but making the perfect selection will enhance not only the taste of your wine, but it will also compliment and enhance the flavors of your already delicious food. Therefore transforming your meal from “good” to “amazing”.
- Cabernet Sauvignon pairs well with red meat, like a juicy burger or a high quality steak. The firm tannins in this wine give a fresh palate after each bite.
- Pinot Noir pairs perfectly with Earthy flavors like mushrooms or truffles. There is a light body to these wines, but depth of savory within the flavor.
- Silky white chardonnays are perfect with Salmon or seafood smothered in rich sauces.
- Dry sparkling wines like brut champagnes have a slight sweetness to them that pairs fantastically with salty foods. The saltiness gives the sparkling wine a crisp freshness to it.
- While some cheeses pair well with white wine and others with red, nearly all cheeses are fabulous with a dry rose’. Rose’ has all the acidity of a white wine and the fruity components of the red to create a nice balance.
Pear and Pomegranate Lamb Tagine
- 2-1/2 pounds lamb shanks
- 2 large pears, finely chopped
- 3 cups thinly sliced shallots
- 1/2 cup orange juice, divided
- 1/2 cup pomegranate juice, divided
- 1 tablespoon honey
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- Then 1 teaspoon ground allspice
- 1 teaspoon ground cardamom
- 1/4 cup pomegranate seeds
- 1/4 cup minced fresh parsley
- Cooked couscous, optional
Directions
- Place lamb in a 5- or 6-qt. oval slow cooker. Add pears and shallots. Combine 1/4 cup orange juice, 1/4 cup pomegranate juice, honey and seasonings; pour over shallots.
- Cook, covered, on low for 6-8 hours or until meat is tender. Remove lamb to a rimmed serving platter; keep warm. Stir remaining orange and pomegranate juices into cooking liquid; pour over lamb. Sprinkle with pomegranate seeds and parsley. If desired, serve over couscous.
D’Anjou pears are a smart choice, and are usually available from November through late Spring. Fresh-squeezed orange juice (with its pulp) can add an extra-special touch to this recipe.
Italian-Style Grilled Cheese Sandwiches
Ingredients
Scali bread
Thinly sliced Land O Lakes® 4 Cheese Italian Blend
Pesto
Speck
Roasted tomatoes
Olive oil
Preparation
For each sandwich, lay out 2 slices of scali bread with the sides that will end up inside the sandwich facing up. Spread 1 slice of bread with pesto and layer 1 1/2 slices of cheese on the other slice.
Top the cheese with 2 or 3 slices of speck. Top the speck with roasted tomatoes. Add another layer of 1 1/2 slices of cheese. Close each sandwich and brush the tops with olive oil. Heat a large skillet over medium to medium-high heat. Place sandwiches in skillet, oiled side down. Brush tops of sandwiches with olive oil. Once bottoms are toasty and golden brown, carefully flip sandwiches. Cook until second side is golden brown. Transfer sandwiches to a cutting board. Cut each sandwich in half and serve immediately.
